i'm looking for a really good eggplant recipe...
anything come to mind?

Too funny, I haven't eaten Eggplant since I was a little kid.. I remember it was fried and I wasn't impressed...
Over the last few months I've seen it come up in a lot of recipes and have been thinking I should give it another try..
Hopefully someone has some great recipes to make it worthwhile!

I haven't made this one in a while.
Beef & Potato Moussaka
12oz eggplant Salt & Pepper 1 3/4 lbs of potatoes 1 lb ground beef 2 onions, peeled and chopped 1/2 tsp dried thyme 3 tbsp chopped parsley 1/4 tsp ground cinnamon 16 oz can crushed tomatoes 1 tbsp tomato paste 2 egg yolks 1 1/2 cup plain yogurt 1/2 cup shredded sharp cheddar cheese
Cut eggplant into large chunks; blanch in boiling salted water 2 minutes; drain well. Peel and thickly slice the potatoes and blanch in boiling salted water 5-6 minutes; drain well.
In a medium saute pan (preferably non stick) fry the beef with onions, thyme, parsley and cinnamon until the meat begins to brown; stir frequently to prevent sticking.
Add tomatoes, tomato paste, eggplant and seasoning; mix well. Spread evenly in a 2 quart shallow casserole. Arrange the slices of potato neatly over the top to cover the beef mixture completely.
For the topping, beat together the egg yolk, yogurt and shredded cheese. Pour over the potatoes to cover completely. Bake uncovered in a preheated 375 F oven about 1 hour. Brown under a hot broiler if necessary.

I use the same recipe for Zucchini and Eggplant....I fry it in a skillet with some veggie oil.
Eggplant veggie oil bread crumbs 3 well beaten eggs salt and pepper 6 slices cooked and crumbled bacon 1/4 cup finely chopped onions
Dip sliced eggplant in beaten egg and then coat the slices in bread crumbs and salt and pepper to taste. Saute some finely chopped onions and crumbled bacon in a skillet in the veggie oil for 5 minutes...then stir in your breaded eggplant slices...yummy

thanks, Shelly! those both look like must-try recipes i love moussaka, but never make it b/c the recipes are usually too laborious... yours looks much simpler, and every bit as delcious as any i've read! thank you so much for sharing!

I know this is going to perhaps icky as fried eggplant for most people is not a favorite but..
roll-crush saltines pretty fine. mix in salt and pepper if you desire. Then dip or coat your eggplant in mayo thinned with a little milk and then sludge through the crackers. You then bake these slices in the oven 400 for 10- minutes. Cut your slices no more than 1/3 inch in other words not a 1/2 inch cause they wont bake. We did this once with my Dad and the two of us didn't eat anything else for dinner we only ate this eggplant I mean it was tasty!
TIP: If you want to take some of the bitterness out of eggplant because maybe cause you think it might be old. Slice the eggplant fip them in lemon to keep them whiter and sprinkle salt on them. Wathc them sweat the liquid just beads up on the slices. Good eating

I also wanted to share ----my Mom's Eggplant Lasagna receipe.
This based on feeding 4-5 people
Depending on size of eggplant to feed your crew maybe 2 if they are skinny a nice healthy fat one is good. 1 can or jar 18oz+ of spaghetti sauce 1clove garlic mashed and diced 1/2 green pepper sliced and diced 1 whole onion sliced and diced 1 pkg mozarrella cheese
Heat oven 350 Good only in glass dish probably 11x 13
Peel and cube eggplant. NB If you have an old or suspect one takeout the seeds also if you do this you will need more flesh. I never did but my sister said some times for some folks it tasted better
Mix eggplant with sauce veggies. Turn into glass dish. (If you like more cheesyiness add some asaigo or parmesan chesse into the mix.)
Cover with foil Cook 30 minutes. It will have alot of juice. Remove foil put on shredded mozarella. Return to oven and cook another 30 minutes. This where the juice evaporates and you get delicious sauce!!!!
There are all kinds of variations here if you dont like green peper keep it out or garlic but at least put in some garlic powder. What your famly likes for spaghetti is what you want to dress this in. I know it is not layered but what can I say that is what she called it.
This was always a crowd pleaser in addition to being pretty easy. I hope you try it and let me know.

eagle, thank you thank you thank you! those are another 2 good applications!!!! my mom/family never used eggplant, so i never had a taste for it as a kid. in fact, i never tried it until i was an adult. i developed a taste for it travelling in the Mediterranean countries. particularly in Greece, where moussaka and other eggplant dishes are ubiquitous. there were a lot of really fantastic eggplant dishes in Spain, too. everything from simply sauteed and drizzled with olive oil to lightly breaded wafer-thin slices deep-fried drizzled with honey. man, i wish i could make that last sort! utterly delicious! i'm going to see if i can find my eggplant pix from my recent trip and post them here. this first dish was so good we had it three of the four times we vistited this restaurant. it has nice big chunks of perfectly cooked eggplant with green peppers, olives, tomatoes, and lots of olive oil, etc. this second picture is eggplant with honey. when it was served we thought it was olive oil drizzled over the eggplant (which also would have been great), but it turned out to be honey! wow, what a delicious surprise to the palate! this extreme closeup makes the slices and the breading look a lot thicker than it was. the slices were flash fried crisp and the breading was delicate and had a wonderful slight crunch. wow, i wish i could make this. i really should try!
