Raspberry and Chocolate Chip Bars
1 1/2 c. flour 1/2 c. granulated sugar 1/2 tsp. baking powder 1/2 tsp. salt 1/2 c. butter, softened 1 egg, beaten 1/4 c. milk 1/4 tsp. vanilla extract 3/4 c. raspberry preserves 1 c. semi-sweet chocolate chips
Heat oven to 400 degrees. Grease a 13 x 9" baking pan. (I prefer a glass pan). Sift together flour, sugar, baking powder and salt in a large bowl. Cut in butter until mixture resembles coarse crumbs. Add egg, milk and vanilla extract. Beat on medium speed until well blended.
Reserve 1/2 c. mixture for topping. Spread remaining mixture onto bottom of baking pan (thin layer). Spread preserves evenly over batter, sprinkle chocolate chips over top. Drop the reserved batter over the chocolate chips. Bake for 25 minutes or until done. Cool completely before cutting into bars.
