Polynesian Meatballs Recipe
1 lb ground beef 1 c. whole oats oatmeal 1/4 c. onion, minced salt and pepper to taste 1 egg 3/4 c. finely chopped green pepper 1/2 c. carrots, chopped 1 (16 ounce) can pineapple chunks 1 pt. cherry tomatoes 2 cloves garlic, minced 1 Tbsp. cooking oil 1/2 c. sugar 1/2 c. red wine vinegar 2 Tbsp. soy sauce 2 tsp. instant chicken bouillon granules 4 Tbsp. cornstarch hot cooked rice
Make meatballs by combining ground beef, egg, oatmeal, salt, pepper and minced onion in a large bowl. Mix together thoroughly. Form into 1" balls. Brown meatballs on all sides thoroughly, until no pink shows in the center. Combine pepper, carrots and garlic and cook in oil until tender. Add sugar, vinegar, soy sauce, bouillon, pineapple (including the juice) and 2 cup water. Add tomatoes. Bring to a rapid boil for one minute. Mix cornstarch in 1/4 c. cold water and stir into hot mixture until thick and bubbly. Just before serving, add cooked meatballs to sauce and stir together. Serve over fresh steamed rice.

yes I do...probably once every 2-3 months. YOu can also use ground turkey or ground pork

yeah, i was thinking of mixing ground beef and pork sausage, like 60/40
one question, do the tomatoes break down or are they still pretty much intact when you serve the sauce?

depends on how long you cook it...they break down a little bit if you go by the cooking time in my recipe but are basically still intact.
