Anyone have a favorite bundt cake recipe?
I have a hankerin' to do some bakin'!
I suppose I could do a 7 Up Cake.
I'd much rather try something new, though.
Anybody?

3 1/4 cups flour 1 cup butter 1 1/2 cups granulated sugar 1/2 cup fresh lemon juice 2/3 cup buttermilk 5 eggs 2 tsp. baking powder 1/2 tsp. salt Grated rind of one lemon
In large bowl combine the butter and sugar until fluffy. Add eggs one at a time, beating well after each addition. Beat in lemon juice and rind. Mix thoroughly.
Sift together the flour, baking powder and salt. Add mixed ingredients to creamed mixture alternately with buttermilk. Pour batter into prepared pan. Bake at 350 for 45-55 minutes or until cake tester comes out clean. Cool in pan for 5 minutes, then turn out onto a rack to cool completely.
Glaze Blend one cup of powdered sugar with 2 tablespoons lemon juice until smooth. Drizzle glaze over cooled cake.

I love using buttermilk in cooking. The "problem" is you can't buy a small container of it. They do make a low fat buttermilk though.
Consider using it to coat chicken before rolling in crushed Ritz or bread crumbs.

good idea about using the left over buttermilk! i always hate it when i have to buy something for a recipe and then don't have anything else to use the ingredient for. so thanks for the chicken idea! one of these days i'm going to get up the nerve to try to make some buttermilk biscuits from scratch. i don't know why it seems scary to me, but it is. i mean, what could go wrong? i might waste 50 cents worth of flour and shortening, but wouldn't it be worth the gamble if i ended up figuring out how to make my own biscuits? i can get by on Bisquick or even canned biscuits, but my BW usually won't touch either. i need to break through this bothersome biscuit barrier and begin baking me some biscuits! or i'll use the extra buttermilk for chicken, like you said. LOL! either way, YUM! thanks, audrey!!!

Yum! ;D That was fun to make, and turned out very nicely. It's a very light cake, tender and delcious. The lemon flavor is almost understated. A very nice cake to serve with tea. Thanks a bunch for the recipe, Audrey!
