Those all sound yummy, especially the mexican lasagna.. That will be on next weeks menu. I like the first one too but think I will use corn tortillas instead of flour. I think they would be healthier and lower in calories, what do you think?

Some of it is taste preference. I prefer flour over corn for taste. Corn is indeed healthier. Our stores sell fat free tortillas, so I tend to buy those. They are not quite as flavorful but they are just fine.

That makes sense.. For regular tacos I like flour better but for anything saucy I want corn.

Pizza 340 calories per serving this recipe is for 2 servings
4 ready to bake refrigerated buttermilk biscuits 2 teaspoons olive oil 1/2 cup diced onion 1/2 cup green bell pepper 1/2 cup tomato sauce 1/2 teaspoon oregano leaves 1/2 teaspoons basil leaves 2 ounce mozzarella, shredded 1 tablespoon plus 1 teaspoon grated parmesan
Preheat oven to 400. On wax paper, place the biscuits. Cover with wax paper and roll out to form an 8 inch circle for the crust.
Fit dough into 7 inch pie pan. With fork, pierce bottom and sides of dough. Bake for 8-10 minutes.
In a skillet, heat oil, add vegetables and saute until soft. Add tomato sauce and seasonings and cooks, stirring constantly, until mixture thickens.
Pour sauce over baked crust. Sprinkle with mozzarella, then sprinkle with parmesan and bake until cheese melts and is lightly browned, 10-15 minutes. Cut in half and serve.

Bacon Flavored Corn Chowder 234 calories per serving this recipe is for 2 servings
2 teaspoons margarine 1/2 cup diced onion 1/2 cup diced celery 1 tablespoon plus 1 1/2 teaspoons flour 1 1/2 cups skim milk 1 cup drained canned whole kernel corn (you can use creamed corn, your calories will go up a bit) 1 teaspoons imitation bacon bits, crushed 1/8 teaspoon salt 1/8 teaspoon powdered mustard dash of pepper
In 1 quart saucepan, heat margarine over medium high heat until bubbly and hot; stir in onion and celery. Cover pan and cook until vegetables are soft 2 to 3 minutes. Add flour and cook stirring constantly with wire whisk for 1 more minutes. Continuing to stir, add milk and bring to a boil. Reduce heat and cook, stirring constantly until mixture is smooth and thickened, about 2 or 3 minutes. Add remaining ingredients and continue stirring and cooking until everyting is combined and hot. Pour into soup bowls and garnish with nutmeg if desired.

Oven Fried Chicken with Orange-Teriyaki Sauce 390 calories per serving this recipe is for 2 servings
10 ounces skinless, boneless chicken breast, cut into 4 pieces 1/2 cup plus 2 tablespoons cornflake crumbs 2 tablespoons grated orange peel 2 tablespoons thawed, frozen orange juice
Sauce 2 teaspoons margarine 2 tablespoons thinly sliced green onion 1/2 garlic clove, minced 2 tablespoons teriyaki sauce 1 tablespoon plus 1 teaspoon reduced-calorie orange marmalade 1 tablespoon water
Preheat oven to 350 degrees. Pat chicken dry. On a paper plate combine cornflake crumbs and orange peel.
Pour juice into small bowl; dip chicken pieces into juice then roll into crumb mixture, coating thoroughlyt. Bake on cookie sheet until chicken is done.
To make sauce: In small saucepan heat margarine over medium heat until bubbly and hot; add scallion and garlic and saute until scallion pieces are soft. Reduce heat to low and add remaining ingredients, cooking until hot and slightly thickened. Serve with chicken.

I have never made this recipe:
Orange Ginger Glazed Pork Chops 450 per serving this recipe is for two servings
12 ounces pork loin chops 2 teaspoons vegetable oil 1 tablespoon minced onion 1/2 cup orange juice 1 tablespoon plus 1 teaspoon reduced calorie orange marmalade 1 teaspoon packed brown sugar 1 teaspoon prepared mustard 1 teaspoon teriyaki sauce 1/4 teaspoon ground ginger 1 small orange, sliced
Broil chops for about 3 minutes on each side.
In small saucepan, heat oil; adding onion and sute briefly, don't burn. Add reamining ingredients, except chops and bring to a boil. Cook anver high heat stirring occasionally about 5 minutes. Should be a bit thickened.
Arrange chops in casserole dish, in one layer. Glaze both sides of chops. Broil, turning once, until glaze is browned about 3 minutes per side. Serve with orange slices and remaining sauce.
