Weight Watchers Snickers Dessert
1/2 gallon of WW Vanilla Ice Milk 1 tub of Cool Whip Lite (not the huge tub, just the normal size one) 1 small pkg of Sugar Free instant chocolate pudding 1/2 cup of chunky peanut butter
Mix it all together and pour into a 13X9X2 pan. Freeze. Cut into 16 equal pieces. (it is easier to do the mixing if you let the ice cream melt a bit first.)
WW exchanges: 1/16 of this recipe equals 1/2 Fat, 1/2 Fruit, 1/2 Protein, 1/2 Milk and 35 opt calories.

Have you tried any of these recipes? Do you like any of them? I've seen the new WW cookbook in the stores. I just won't spend the money on it. Plus I have quite a few cookbooks already.

Im almost out of lean cuisines.. last week they were on sale for $1.88 at albertsons and I stocked up.. hopefully they are still on sale.
Question: On the beef enchilada recipe, do you think it would make much difference if I used prepared sauce?

Im making the beef enchiladas right now and may have found a way to reduce the points. Instead of the given sauce recipe I made my own and it eliminates the chili sauce but uses 1 cup of tomato sauce which I think might be better than 4 cups of tomatoe puree??? I could be wrong but here is what I used for sauce.. let me know you think and I will let you know how it turns out.
3 tsp. Oil 2 tsp. Chili powder 2 tsp. Flour 1 tsp. Ground Cumin 1/2 tsp. Red pepper flakes 1 cup. Water 1 cup. Tomato sauce 1 tsp. Vinegar 1/2 tsp. Garlic powder 1/2 tsp. Oregano

I have not tried these, but found this recipe:
Low Fat Beef Enchiladas
1 tsp canola oil 1/2 cup finely chopped onion 8 ounces extra-lean ground beef 2 tsp cumin 1 cup pinto beans 1 14.5-ounce can crushed tomatoes 1 4-ounce can diced green chiles 4 low fat flour tortilla wraps 1 10-ounce can enchilada sauce 1/2 cup reduced fat shredded Jack cheese
Preheat oven to 350 degrees. Coat an 8-inch square baking dish with nonstick cooking spray.
Heat oil in a large nonstick skillet. Sauté onions until translucent. Crumble in beef and cook until no longer pink.
Add cumin, beans, tomatoes and chiles. Cook for 10 minutes until sauce is reduced. Spread a little enchilada sauce on each tortilla. Spoon beef mixture into each of the four tortillas. Roll up and place seam down into the baking dish. Four will fit into the dish perfectly. Pour remaining enchilada sauce over the tortilla rolls. Top with shredded cheese. Bake for 20 minutes until sauce is bubbly and cheese has melted.
Serves 4.

Here's another one I found that I have not tried
Low Fat Mexican Chicken Bake
1 tbsp canola oil 1/2 red onion, sliced 1/2 yellow or red pepper, cut into strips 1 jalapeno pepper, deseeded and finely chopped 1 tbsp cumin 1 14.5-ounce can recipe-ready Mexican style tomatoes (reserve 1/4 cup) 1 1/2 cups shredded cooked white-meat chicken 2 6-inch corn tortillas 2 tbsp chopped cilantro 1/2 cup reduced fat shredded Jack cheese
Prehat oven to 350 degrees. Heat oil in a large nonstick skillet. Sauté onion, pepper strips and jalapeno for 3-4 minutes. Sprinkle cumin and stir well. Add tomatoes, except 1/4 cup, and simmer for 5 minutes.
Add shredded chicken and cook for 2 minutes. Spray a 9-inch pie dish with nonstick cooking spray. Place one tortilla on the bottom. Spoon the chicken mixture on top. Cover with other tortilla. Spoon remaining tomatoes over top, followed by cilantro and cheese. Bake for 15-20 minutes.
Cut into wedges and serve with beans and rice or a green salad.
Serves 4.

Sour Cream Chicken Enchiladas 6 servings
1 8 oz. container light sour cream 1 8 oz. container nonfat plain yogurt 1 10 3/4 ounce can fat-free cream of chicken soup 1 4 oz. can diced chili peppers 12 (7 inch) white corn tortillas 4 ounces lowfat cheddar cheese 1 1/2 cups cooked chicken breast, chopped 1/4 cup sliced green onions Heat oven to 350 degrees. Spray 13x9" baking dish with nonstick spray. In medium bowl combine sour cream, yogurt, soup and chiles. Heat a flour tortilla until soft. Spoon 3 tbs. sour cream mixture down center of each tortilla (reserve some for garnish). Top with cheese, chicken and onions. Roll up and place seam side down in baking pan. Spoon remaining sour cream mixture over top. Cover with foil. Bake at 350 degrees for 25 to 30 minutes. Sprinkle with 1/4 cup reserved cheddar cheese. Bake uncovered another 5 minutes. Garnish with shredded lettuce and chopped tomatoes or salsa.

Mexican Lasagna 8 servings
10 flour tortillas 8 ounces boneless skinless chicken breast, cooked & shredded 16 ounces black beans, refried 10 ounces enchilada sauce 1 green bell pepper, diced 1 tomato, sliced thin 1 cup sliced black olives 2 cups lowfat cheddar or jack cheese, grated 1 cup chopped onion 1/4 cup green chili, diced 1/4 cup cilantro 2 teaspoons chili powder Lightly saute the onions and bell pepper w/chili powder and cilantro. Coat bottom of 8x8 baking dish (or dutch oven) with enchilada sauce, then simply layer the ingredients, starting with a tortilla topped with more sauce. Alternate black bean and chicken layers, and include some of the onion/pepper mix, chiles, and olives with each. Layer 1/2 of the cheese in the middle and add the tomato as desired, reserving enough slices to cover top. Top last tortilla with sauce, remaining cheese, tomato slices, and olives; pour any extra sauce down the sides of the stack. Cover with foil and bake at 350 for 45 minutes. Remove, uncover, and let cool 10 minutes before slicing.
