From Womens Day 1-2-3 recipes:
Half and half (fat free) one box (3.4 oz) of pitachio flavored instant pudding and pie filling 1/4 cup of coarsely chopped unsalted pistachios
Put half and half (2 1/2 cups) in a medium bowl. Add the pudding mix and beat with a whisk for two minutes. Stir in pitachios
Pour into a square or round metal cake pan and place in freezer. Freeze at least two hours, stirring frozen edges into center with a rubber spatula every thirty minutes until firm. If desired, serve sprinkled with chopped pitachios.
Six servings 162 cals per serving 3 g of fat
