I should have posted this one yesterday for St Patricks day but I just tried it this afternoon!
1 can of corned beef 1 small can (8 or 6 oz)bavarian style saurkraut 4 slices swiss cheese thousand island dressing 8 slices deli rye bread or light rye
Dice corned beef and put in bowl, drain saurkraut really well and add to corned beef. Cut swiss cheese into small shred sizes and mix in with corned beef and saurkraut. Add about 2/3 cup of thousand island dressing and mix well. Butter one side of all 8 slices of bread. Place buttered side down in frying pan and top with good helping of meat mixture. Place slice off bread buttered side up on top of the meat mixture and cook on both sides until golden brown. Slice and enjoy! I think this would also be good in a panini pan if you have one.
