Ok I know this was posted a long time ago and you probably don't remember but this is how I make my collards yeah I live in Hawaii but I was born in SC and raised in FL lol. In a big stock pot after thoroughly cleaning the collards fill it up with water and throw either bacon or ham depends on your taste Virginia ham is really good because then you don't have to add the salt. But just throw them in salt and pepper and cook pretty much all day. The pork gives it really good flavor. I don't like tabasco so much so I don't throw that in there lol. But if you want good hot sauce though that's got good flavor and is just the best you can sink your mouth into if you can find it I know it's pretty hard to find if your up north but the only grocery store I found that had it when I was in Washington was Safeway and occasionally Grocery Outlet and it's called Crystal hot sauce.

MMMMM!!!! Reading this post is making me so hungry!!!! Below is how we prepare our greens (southern style) ... of course, what are greens without some homemade fried chicken, cornbread and mac and cheese? And let's not forget the ice tea Clean and wash greens well - wash until you can't feel any sediment at the bottom of the sink; remove tough stems and ribs. Cut them up and place in a deep pot; add onion. Wash off ham hock and add to the pot. Add red pepper and salt. Add enough water to cover greens and cook until tender, about 1 hour. Taste and adjust seasonings. We always throw in Cajun Seasoning with ours.

Well I am from good ole Louisiana and we use collard greens but we really like mustard greens better can also get them in a can of fresh. Do the same as Kim said to clean them but when I cook them, I add whole potatoes, carrots, cabbage, whole onions salt meat or pickled pork and boil all that together then add mustard greens or collards when potatoes are almost cooked about half tender.
also for the collard greens strong taste try adding a little sugar about a teaspoon this will decrease the bitter taste.

Thanks Janice! That sounds sooooo yummy! I have never heard of pickled pork other than pigs feet though.. where do you find it?
